Idly batter preparation :

  • Rinse idly rice 3-4 times and soak them well for at least 6 -8 hours.
  •  Rinse the urad dal and fenugreek seeds and soak them together in a bowl for 4 hours.
  •  Grind them until it’s getting a smooth batter.
  • Fermentation is a key point in making perfect idly, make sure the batter is well fermented.

Tip:

The ratio of idly rice and urad dal is 2:1 ratio.

for example, if we take 2 cups idly rice, urad dal is 1 cup.

Steaming :

  • Grease the idly molds or plates with oil or ghee.
  • Pour the idly batter into each mold, filling them about 3/4 full.
  • Steam the idly in an idly cooker or steamer for 10-12 minutes. Use medium heat.

Serve the hot idly with sambar or chutney or podi with ghee.

Ingredients And Cooking Instructions :


For Cooking Dal:
Toor dal (pigeon peas) – 1/2 cup
Turmeric powder – 1/4 tsp
Water – 2 cups

  • For the Tamarind Mixture:
    Tamarind pulp – 1 tbsp (or a small lemon-sized ball soaked in 1/4 cup warm water and strained)
    Water – 1/2 cup
  • Vegetables:
    Drumsticks (cut into pieces) – 1/2 cup
    Carrot (sliced) – 1/2 cup
    Brinjal (eggplant) – 1/2 cup
    Pumpkin (cubed) – 1/2 cup
    Okra (ladyfinger) – 4-5 (cut into pieces)
    (Any combination of preferred vegetables may be used)
  • Spices and Seasonings:
    Sambar powder – 1.5 tbsp
    Asafoetida (hing) – a pinch
    Curry leaves – 8-10
    Mustard seeds – 1 tsp
    Dry red chilies – 2
    Fenugreek seeds – 1/4 tsp
    Salt – to taste
    Sugar (optional) – 1/2 tsp
    Fresh coriander leaves – for garnish
  • For Tempering:
    Oil or ghee – 2 tbsp
  • Instructions
    Cook the Dal:
    Rinse the toor dal thoroughly. Pressure cook it with turmeric powder and water for 3-4 whistles (or until it becomes soft). Mash the cooked dal and set it aside.
  • Prepare Vegetables:
    In a pan, combine the vegetables (excluding okra) with 1.5 cups of water. Cook until they are tender yet firm.
  • Add Tamarind Mixture:
    Incorporate the tamarind pulp into the vegetables and bring the mixture to a boil. Allow it to simmer for 5-7 minutes.
  • Add Sambar Powder:
    Stir in the sambar powder and asafoetida into the simmering mixture of tamarind and vegetables. Mix thoroughly.
  • Combine Dal and Vegetables:
    Introduce the mashed dal to the tamarind-vegetable mixture. Stir well and let it simmer for an additional 5-7 minutes. Adjust the consistency with water as necessary. Season with salt and sugar (if desired).
  • Prepare Tempering:
    In a small pan, heat the oil or ghee. Add the mustard seeds and allow them to splutter. Then, add the curry leaves.

Vegetable Pulao

Vegetable pulao is one of most simple and quick recipe for family ,if you don’t have much time ,most preferable recipe. Serve the pulao with raita (yogurt) is best combination ever. The vegetable pulao is commonly known as veg pulao .

Ingredients :

  • 1 cup basmati rice (washed and soaked for 20 minutes)
  • 2 tablespoons oil or ghee
  • 1 teaspoon cumin seeds
  • 2-3 cloves
  • 1 bay leaf
  • 2-3 green cardamom pods
  • 1 small cinnamon stick
  • 1 medium onion (sliced)
  • 1 teaspoon ginger-garlic paste
  • 1 green chili (slit)
  • 1 cup mixed vegetables (carrots, peas, beans, and cauliflower)
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder (optional)
  • Salt to taste
  • 2 cups water (or adjust for your rice) Fresh coriander (chopped, for garnish)

Cooking Instructions

  • Wash the basmati rice under running water until the water runs clear. Soak for 20 minutes, then drain and set aside.
  • Chop the vegetables into small, even-sized pieces.
  • Heat oil or ghee in a deep pan or pressure cooker over medium heat.
  • Add cumin seeds, cloves, bay leaf, cardamom, and cinnamon. Saute for 30 seconds until fragrant.
  • Add the sliced onions and sauté until golden brown.
  • Stir in ginger-garlic paste and green chili, cooking until the raw smell disappears.
  • Add the chopped vegetables, turmeric powder, and red chili powder (if using). Cook for 2-3 minutes.
  •  Gently mix in the soaked and drained basmati rice. Stir for 1-2 minutes to coat the rice with the spices.
  • Add water and salt to taste. Bring to a boil, then lower the heat.
  • Cover the pan with a lid and cook until the rice is tender and water is fully absorbed (about 15-20 minutes).
  • Gently mix the rice with a fork to avoid breaking the grains.
  • Garnish with chopped fresh coriander.

Butter Chicken Recipe

Ingredients:

    • 500g chicken (boneless or with bone, cut into pieces)
    • 1 cup yogurt (thick curd)
    • 1 tablespoon ginger-garlic paste
    • 1 teaspoon turmeric powder
    • 1 teaspoon red chili powder
    • 1 teaspoon garam masala
    • Juice of 1 lemon
    • Salt to taste
    For the Gravy:
    • 2 tablespoons butter
    • 1 tablespoon oil
    • 2 large onions (finely chopped)
    • 3-4 medium tomatoes (pureed)
    • 10-12 cashews (soaked in warm water and blended to a paste)
    • 1 teaspoon ginger-garlic paste
    • 1 teaspoon red chili powder
    • 1 teaspoon cumin powder
    • 1 teaspoon coriander powder
    • 1/2 teaspoon turmeric powder
    • 1/2 teaspoon garam masala
    • 1 teaspoon kasuri methi (dried fenugreek leaves)
    • 1/2 cup fresh cream
    • Salt to taste
    • Fresh coriander (for garnish)

Cooking Instructions

Marination process:

  • In a bowl, mix yogurt, ginger-garlic paste, turmeric, red chili powder, garam masala, lemon juice, and salt.
  • Add the chicken pieces and coat them well. Cover and refrigerate for at least 1 hour (preferably overnight for better flavor).

  • Chicken cooking process:
  • Heat a grill pan or regular pan and lightly grease it with oil.
  • Cook the marinated chicken pieces until they are slightly charred and cooked through. Set aside.
  • Prepare the Gravy:
    • In a large pan, heat butter and oil. Add chopped onions and sauté until golden brown.
    • Add ginger-garlic paste and sauté until the raw smell disappears.
    • Add tomato puree, red chili powder, turmeric powder, cumin powder, coriander powder, and salt. Cook until the oil starts separating from the mixture.
    • Stir in the cashew paste and cook for another 2-3 minutes.
  • Combine Chicken and Gravy

  • Add the cooked chicken to the gravy and mix well.

  • Sprinkle garam masala and kasuri methi, crushing it between your palms for maximum flavor.

  • Stir in fresh cream and simmer for 5-7 minutes on low heat.
  • Serve the chicken butter masala with rice or roti .

Ingredients

  • Wheat flour 2 cups(atta)
  • Oil or ghee 2 tablespoons
  • Salt (its up to you)
  • Water (as you required)

  • Dough preparation :

  • Take wide bowl add the ingredients mentioned above knead them well ,keep soft dough rest it for 20 mins. If you want perfect roti the whole process is depends in dough only ,make dough perfectly.
    Cook rotis :
  •  Make rotis by using roller pin ,keep aside them and take tawa heat the tawa add little bit oil ,place the raw rotis and cook them in medium flame roast them evenly ,repeat the process .
